Cassava Gnocchi with Vegan Bolognese Sauce
Preparation time: 45 minutes
140g plain flour
3 tbsp Lotus Savoury Yeast Flakes or Bragg Premium Nutritional Yeast Flakes
1 tsp salt
2 tbsp vegan butter
1 tsp olive oil
380g Fry’s Veggie Mince with Vegan Gravy
100g brown onion
200g tomato paste
1/4 cup of red wine

In a pot with water and salt, cook the cassava until very soft. Drain the water and smash it very well. Then add plain flour, salt and nutritional yeast. Make rolls and slice them in small pieces.
Cook in boiling salty water, when the gnocchi floats, it is cooked. Take it out and dry the water.
Now, in a fry pan, put butter, olive oil and sage. Add the gnocchi and fry until golden.
For the bolognese sauce, in a pot, put butter and olive oil and fry the brown onion. Then add the vegan mince and fry for 1 minute. Pour the red wine.
Now add the tomato paste, olives and parsley. Let it cook for 10 minutes.
