Instant Delicious Olive Paste (Mum's recipe)


1 ½ cups; Prep 3 mins

 

Ingredients

200g pitted kalamata olives

1 tablespoon olive oil

1 roughly chopped red onion

1 roughly chopped garlic clove

1/2 cup of walnuts

 

Place the olives, oil, red onion, garlic and walnuts in a blender.  Blend for 2 minutes until a paste forms.

If you want to change consistency, just add a bit more oil.

Variance: if you want to have a more creamy flavour, add 1/2 cup of cashew cream.

Put into a small airtight container and keep refrigerated until required.
