  • 1/2 tbsp coconut oil
  • 1 tbsp hemp seeds
  • 30 g dried cranberries
  • Coconut flakes (for rolling)

Instructions:

  1. Begin by soaking the dried dates and nuts in boiling water for about 15 minutes. This will help soften the dates and make them easier to blend. After soaking, drain the water.
  2. In a food processor or blender, first blend the nuts until they are lightly crushed. Set them aside for later use.
  3. In the same food processor or blender, add the soaked dates, vegan protein powder, cocoa powder, peanut butter, and coconut oil. Blend until the mixture is creamy and well combined. You may need to scrape down the sides and blend again to ensure everything is thoroughly mixed.
  4. Once the date mixture is creamy, transfer it to a mixing bowl.
  5. Add the hemp seeds, dried cranberries, and the crushed nuts to the bowl. Mix everything together until all the ingredients are evenly distributed.
  6. With clean hands, take portions of the mixture and roll it into bite-sized balls. You can make them as large or as small as you like.
  7. To finish, roll each energy bite in coconut flakes, covering them generously.
  8. Place the energy bites on a plate or tray lined with parchment paper and let them set in the refrigerator for at least 30 minutes. This will help them firm up.
