Vegan Banana Peel Meat

Vegan Banana Peel (skin) Meat
Servings: 5
Preparation time: 45 mins

15 banana peels (skins)
100g brown onion
100g red onion
50g green capsicum
50g yellow capsicum
50g red capsicum
50g carrot
3 garlic cloves
Spring onion
1 tbsp olive oil
500ml vegan beef stock
120g tomato paste
3 tbsp vegan barbecue sauce
1 tbsp Dijon mustard
1 tbsp smoked paprika
1/2 tsp cumin
1/2 tsp nutmeg
1/2 tsp lemon pepper

How to cook:

Use 15 banana skins. You can use frozen ones or use fresh ones but not too fresh, skins need to have some black dots on.

Scratch the inside white part of the banana skin with a spoon until the skin become very thin. Chop the skins.

In a hot pot, put a spoon of olive oil, brown and red onion and garlic. Cook for five minutes. Then add banana skin, plus green, yellow and red capsicum, carrot and spring onion. Let it fry for one minute and add white wine. Add vegan beef stock, tomato paste, vegan BBQ sauce, Dijon mustard and all the seasoning. Let it cook for around 30 minutes.

You can use banana skin meat to fill sandwiches, pizza, lasagna, pies or make a sauce for a pasta, gnocchi or polenta.
