Vegan Super Creamy Brownie with Berry Coulis
Preparation time: 45 minutes
2 cups of plain flour
2 cups of raw sugar
3/4 cups of cocoa powder
1 tsp baking powder
1 pinch of salt
100ml vegetable oil (canola, sunflower)
150 coconut oil
250ml of water
1 tsp vanilla essence
80g of Loving Earth Raw Organic Dark Chocolate (chopped)
First, mix the dry ingredients: flour, sugar, cocoa powder, salt and baking powder.
Then, add the liquids: vegetable oil, coconut oil, vanilla essence and water. Mix it very well. Now add the chopped chocolate.
Put in a tray (25x20cms) greased with oil and cocoa powder.
Bake it for 20 to 25 minutes at 180 C. Brownie outside should be crunch but the inside need to be creamy.
Let it cool down before cut.
2 cups of fresh or frozen berries (strawberry, blueberry, blackberry and raspberry)
1/4 cup of white sugar
2 tbsp lemon juice
Mix everything in a pot and cook in a low heat until it is thick, around 20 minutes.
